Glühwein / Mulled wine

Glühwein or mulled wine is a German/Austrian holiday drink that most people have during the winter season. This alcoholic beverage is a must-have during the festive season here. Interestingly, this wine is also known as glow wine as it is warm and when you drink it, it makes you glow from the inside. It's a warm & cozy wine infused with spices and citrusy flavours which is perfect for the cold and freezing winter weather.
I stumbled upon this wine during my first Christmas in the Netherlands last year (2019). They were lighting the Christmas tree at the city center and the streets were crowded and lined by food carts selling delicious Christmas treats, desserts and warm Glühwein. This year however, we are under a strict lockdown due to the ongoing pandemic and with everything shutdown we couldn't experience the beautiful Christmassy vibe outdoors. So, I decided to bring the Christmas vibe indoors and made my own batch of this cozy, warm drink. So, here you go a delicious, warm and perfect holiday drink for your soul.

Turkish Bread with Za'atar Spice and Baba Ghanoush Dip

I came across Turkish bread for the first time after I moved to the Netherlands and I bought it from a Turkish shop near my place. Absolutely fell in love with it! The softness and flavours were just amazing and right then I decided I am going to try making my own batch. This is absolutely lovely and versatile; you can pair it with anything. You can make a bruschetta, pair it with some shrimp salad or have it with some dip like hummus and baba ghanoush. I paired mine with some creamy baba ghanoush and a generous garnish of za'atar spices. The best part about creating this dish was that it was so simple and easy to make. In my head I had inflated the difficulty too much and was expecting some really hard and tricky process to it, but it turned out to be so simple! Not to forget the excitement I got when it came out as amazing as I was expecting. SOFT, FLUFFY AND DELIUCIOUS! So, read on to know how I made this amazing bread with a simple and fool proof method. ...

Hummus and Falafal

Hummus! What can I say about this dish. Creamy, buttery and loaded with flavor! It's a simple dip or spread that can add that oomph to your chips, salads, wraps or truly anything. My favorites include adding it in my salad or wrap or use it as a dip for some crackers. It's a simple and easy recipe which needs few ingredients and is also quick to make. You can always add a lot more to your hummus and make it in your own special way with your favourite flavours, but I have made the classic hummus here with some classic falafals to go with it. Galette (Sweet & Savoury versions)

Recently I was talking with my best-friend and discussing about new recipes and how well things are going with my page, when she introduced me to this amazing dish that's been trending and wanted me to give it a try. Me being an amateur at baking and zero experience, wasn't sure how it would turn out. So, I went online and looked for the recipe and decided to give it a try 🙂. As my first attempt, I made these small ones so that if I fail not much will be wasted and it would be less of a disappointment. I didn't have unsalted butter with me so I used sated ones and just did not add any salt in the dough. Also added a little sugar to it just for a slight extra flavour. Then, while it was baking, my oven broke down with just 10 mins left on it, leaving me completely heartbroken. I thought for a while and came up with a way to salvage it. I added it as a tip to the end of my recipe. So read on to find out how I saved my recipe. 😜😜 ...

Rainbow Salad Bowl

For the longest time I couldn't understand how people can have just a bowl of salad for lunch and be full. It just didn't register. Coming from a country that loves food and where food is an expression of love itself, it was too difficult for my teeny tiny brain to comprehend. It's only when I moved to Europe and experienced my first salad bowl that I truly understood. It felt like a nice warm hug during gloomy days. I completely agree that salads can be boring sometimes and just not as tasty as you would want it to be, that's why I try my best to make my bowls interesting and delicious every time. Now, even my mom is a fan of my salad bowls. I keep adding and experimenting with the dressing and this time I just tried my first ever roasted and stirred rainbow salad bowl. Hope you like it. 😊😊😊 ...

Broccoli Parmesan Fritters

Broccoli is a vegetable that I rarely use in my meals. I just kind of don't know how to make them properly and I feel nervous to make them simply as its own dish. On this day, I had ½ of my broccoli left in the fridge and it was about to go bad, and since I was already done with lunch, I decided to make a healthy snack to go with my evening tea. That's how I came up with the idea to make these fritters. With, an experimental mind and the nervousness of failing I gave it a shot. Not only did it turn out to be amazing, it was very light and full of flavor. This dish can also be made as a broccoli cheela and eaten as breakfast. It's super delicious and yummy. 😋😋😋 ...

Olan

This is a specialty among keralites and mostly made during onam celebrations. It's a very simple dish made out of just 6 ingredients and lite on your palate. People generally combine it with rice, but it also goes well with idiappam and appams.  This is one of my favorite Kerala dishes because of how simple and light it is. It's made with ash gourd, pumpkin, cow peas and coconut milk. A subtly spiced curry, perfect for anyone who isn't a big fan of very spicy food. Definitely try this dish 😋😋. Beetroot Kadhi With Crispy Bhindi

Kadhi are one of the easiest and quickest dishes ever made. In this rendition of the dish, inspired from a recipe by @cupcakeree , I have tried my hand at giving the traditional Gujrati kadhi a slight twist by adding some beetroot to give it a beautiful fuchsia colour. The crispy fried bhindi (okra) and sweet tangy kadhi combo was simply amazing. I served them with some steamed red rice and it was a big hit at lunch.  My dad isn't a big fan of kadhi and tries his best to avoid anything with a yogurt base, but to my surprise he relished his meal and that was the best compliment for me. He not only loved it but also kept asking for more. All I can say is, "mission success!!" 😁😁. Try it out for yourself and let me know your take on it in the comments below.
