Glühwein / Mulled wine

Glühwein or mulled wine is a German/Austrian holiday drink that most people have during the winter season. This alcoholic beverage is a must-have during the festive season here. Interestingly, this wine is also known as glow wine as it is warm and when you drink it, it makes you glow from the inside. It's a warm & cozy wine infused with spices and citrusy flavours which is perfect for the cold and freezing winter weather.
I stumbled upon this wine during my first Christmas in the Netherlands last year (2019). They were lighting the Christmas tree at the city center and the streets were crowded and lined by food carts selling delicious Christmas treats, desserts and warm Glühwein. This year however, we are under a strict lockdown due to the ongoing pandemic and with everything shutdown we couldn't experience the beautiful Christmassy vibe outdoors. So, I decided to bring the Christmas vibe indoors and made my own batch of this cozy, warm drink. So, here you go a delicious, warm and perfect holiday drink for your soul.

SERVES: 6-7
PREP TIME: 10 mins
COOK TIME: 30 mins
  • 2 bottles of red wine (preferably sweet wine) 
  • ½ cup brown sugar
  • ½ cup brandy
  • 2 cups apple cider
  • 4 cinnamon sticks
  • 8 cloves
  • 4 star anise
  • 1 orange (cut into circles)
1. Mix: In a large pot combine wine, brandy, apple cider, brown sugar, spices and slices of orange and stir over medium heat until the sugar dissolves, about 2 minutes. Increase the heat and bring the mixture to boil then reduce the heat to low. Simmer gently until the flavours meld, about 30 minutes. Strain the mixture, discarding the solids. You can safely store this refrigerated for a week or so, don't think it will last that long anyway! 😉😉

2. Serve: Pour into cups and garnish with an orange round. Serve warm.

Falafal Flatbread with Classic Hummus & Veggie Topping

These are perfect as a snack or a party platter. I love falafal and falafal in the form of a flatbread is just wow.  There is no actual falafal in this recipe but the ingredients used to make falfal like chickpea, cumin, garlic, parsley, coriander, olive oil are used to make this flat bread.  I used hummus and some salad veggies as topping and just fell in love with it. You can also use yogurt or muhammara dip. I actually used two kinds of dip here, on one of the flat breads I added some pizza sauce to the base with salad vegges as topping and for the second one I used hummus. I honestly loved both of them. Sabudana Khichdi

Sabudana Khichdi is one of the most consumed breakfast dishes in India and often consumed during fasting season. This breakfast dish is one of my favourites. It does not use a whole lot of spices and it's very simple to make it delicious and soul comforting at the same time. Rainbow Salad Bowl

For the longest time I couldn't understand how people can have just a bowl of salad for lunch and be full. It just didn't register. Coming from a country that loves food and where food is an expression of love itself, it was too difficult for my teeny tiny brain to comprehend.
