Pumpkin Carrot Soup


Well, I was sitting by my window today, having my daily dose of caffeine and listening to my favorite Kishore da song when I saw this beautiful sunset in front of me. Right in that moment, I knew I had to create it on my plate. So I just closed my eyes for a mental picture and this is what I saw. This soup is truly a bowl fill of warmth, taste and comfort. I hope you enjoy it as much as I did 😊😊.

SERVES: 4
PREP TIME: 5 mins
COOK TIME: 15 mins
  • 2 cups pumpkin (diced)
  • 1 cup carrot (diced)
  • 2 garlic cloves
  • ½ onion (finely chopped)
  • 1 cup vegetable stock/water
  • 1 tsp chilli powder
  • 1 tsp turmeric powder
  • milk cream
  • pepper
  • salt
  • oil

1. Roast: Add some oil in a pan, add the garlic and onion and cook this for a min or two. Now add the pumpkin and carrots and cook this till they turn brown. Add the vegetable stock/water and mix these well. Add the spices - turmeric powder, chilli powder, salt and pepper. Let this simmer for about 15 mins.

2. Blend and Enjoy: Once it has cooled down, add this to a blender and blend it into a smooth consistency. After blending it, put it back in the pan, add some more vegetable stock and simmer for 2 mins. In the end, drizzle some cream on top and check for seasoning. Enjoy with a slice of crisp butter toasted bread.

Chole Masala

Chole (chickpea) masala is one of my favorite dishes. There are a lot of ways to make this and I think everyone likes to experiment with this recipe. This is one of my versions that I simply love . Just an amazing way to makes eggs!!! I had never made eggs like this before. I'm not at all a morning person, and if I do manage to wake up super early, I want my breakfast to be high in protein and be something that keeps me full for the rest of the day. Nei appam in Tamil literally translates as nei meaning ghee and appam meaning pancake. It's a traditional sweet made during auspicious events like kartikai, gokulastami and other auspicious events and is a great snack for kids. Pumpkin Bread

It's almost November and here in the northern hemisphere it's the time you find some beautiful fresh fall produce like pumpkin, butternut squash, sweet potato, etc. If you haven't tried making pumpkin bread before, then I would totally recommended it. It's easy to follow, does not involve any special baking techniques and the dough is super easy to work with.
