This is a simple summer lunch, deliciously light on the palate and looks beautiful on the plate. I think that kind of rhymed πππ. If you are a fan of mushrooms then this is the perfect dish for you. It's creamy & buttery, optionally spiked with a hint of whiskey to add an extra dimension.
I had a early doctor's appointment in the morning and a hair cut scheduled in the afternoon which meant I did not have a lot of time to prepare lunch. So, I wanted to make something quick and simple. I had a box of mixed mushrooms I bought during my grocery trip the other day and realized this was the perfect opportunity to try out my recipe. The creamy sauce with toasted mushrooms along with some fresh herbs and garlic on a bed of spaghetti made for an amazing lunch.
So, read on to learn how I made my creamy mushroom stroganoff and try it out yourself.
SERVES: 2
PREP TIME: 10 mins
COOK TIME: 15-20 mins
- spaghetti for 2 servings
- 400g mixed mushrooms
- 1 medium red onion (sliced)
- 2 garlic cloves (sliced)
- 1 tsp paprika
- salt
- freshly ground pepper
- ½ cup full fat cream
- ½ cup fresh parsley (finelly chopped)
- 1 tsp capers
- 3-4 pickled onions
- little water
- 1 tbsp olive oil
1. Make Mushroom Stronganoff: Toss the mushrooms on medium heat. Once they start to sweat a bit add the sliced onions and garlic to it with a little olive oil. Now, add paprika, salt and some freshly ground pepper and give it a stir. Chop some picked onions and add them to the mushrooms. Add some capers and freshly chopped parsley. Give these a good mix. Now add some fresh cream and little water and give this a good stir. Simmer this and let the flavours infuse for 1-2 mins.
2. Serve: Serve this with some spaghetti or basmati rice as per your preference. I personally liked it with spaghetti with a drizzle of powedered Parmesan cheese. Hope you enjoy it as much as we did πππ.
