Nei appam in Tamil literally translates as nei meaning ghee and appam meaning pancake. It's a traditional sweet made during auspicious events like kartikai, gokulastami and other auspicious events and is a great snack for kids. The recipe is very simple and quick to make with very few ingredients. Just the sweet aroma of ghee and fried appam that fills the kitchen when cooking is mouthwatering.
This is one of my favourites among South-Indian treats. During traditional festivals at home, my amma would make nei appams along with a feast and me and my sister would stand besides her hogging on these hot out of the pan. Now that I'm married and living with my husband, I make these delicious treats at home while my husband stands next to me and hogs on them π€π€. Read on below to know how to make these yourself and enjoy the amazing soul satisfying treats. πππ

PREP TIME: 10 mins
COOK TIME: 20 mins
- 1 cup rice flour
- 1 cup grated jaggery
- ¼ tsp cardamom powder
- ¼ cup of chopped coconut
- 2 banana
1. Make puree: Make a puree of the bananas and keep it aside. Now, take some water in a pot/kadai and add jaggery. Keep stirring the pot/kadai till the jaggery is completely melted. Strain it in a bowl and keep it aside.
2. Make batter: Mix the banana puree with the jaggery, add the cardamom powder and rice flour. Mix all the ingredients properly and add some coconut pieces and mix it along. Add some water till you get a dripping pancake batter consistency and let it sit for 20 mins.
3. Fry: Heat a paniyaram mould, and add some ghee in the moulds. Pour the nei appam batter into the mould once the ghee is hot. Flip after it's cooked on one side. Cook for about 5-7 mins till you get a nice brown color and serve them hot.
