Breakfast Egg Muffin Cups

This is the perfect protein-packed quick and simple meal for a busy day. If you are trying to cut out carbs for a low carb or keto diet, this is definitely the dish to be on your list. 
I find eggs to be the most versatile protein sources available. You can just add your favourite toppings or ingredients to it and you are good to go. Be it shakshuka, frittata, omelette or poached eggs it's always a meal to look forward to. However, you don't always want to spend a lot of time prepping your meal and you feel like whipping up a quick one. These eggs are the one for such moments. Add all your ingredients in a bowl, mix it, add some of your preferred spices, pour it into the mould and bake. Your breakfast is ready to go! Hope you enjoy. 😁

  • 6 whole eggs
  • ¼ cup cheddar cheese or any processed cheese
  • 1 medium onion (finely chopped)
  • 1 tomato (finely chopped)
  • 2 green chillies (finely chopped) adjust as per your heat tolerance
  • 2 cloves garlic (finely chopped)
  • chicken sausages (cut in circles) optional
  • coriander (finely chopped)
  • salt
  • pepper
  • olive oil
Toppings (as per preference)
  • ricotta cheese
  • avocado
  • chicken hot dog
1. Mix: In a bowl add the eggs, chopped onions, tomato, green chillies, garlic, cheese, salt and pepper. Give all of these a good whisk till everything is mixed well together.

2. Bake: Pre-heat the oven to 180°C. Till the oven is heating up, brush some olive oil on your cup cake mould and pour the egg mix half way. Add some cheese on top and bake it for 20 mins. Remove the tray and let it cool down. 

3. Plate: Put the muffins on a plate and top it off with your preferred toppings. I added some ricotto cheese, avocado and hot dog pieces. Enjoy with some hot tea.

Mackerel Curry

I recently discovered this recipe on my usual inspiration hunt online and decided to give it a try. Turkish Bread with Za'atar Spice and Baba Ghanoush Dip

I came across Turkish bread for the first time after I moved to the Netherlands and I bought it from a Turkish shop near my place. Absolutely fell in love with it! The softness and flavours were just amazing and right then I decided I am going to try making my own batch. This is absolutely lovely and versatile; you can pair it with anything. Falafal Flatbread with Classic Hummus & Veggie Topping

These are perfect as a snack or a party platter. I love falafal and falafal in the form of a flatbread is just wow.  There is no actual falafal in this recipe but the ingredients used to make falfal like chickpea, cumin, garlic, parsley, coriander, olive oil are used to make this flat bread.  I used hummus and some salad veggies as topping and just fell in love with it. You can also use yogurt or muhammara dip. I actually used two kinds of dip here, on one of the flat breads I added some pizza sauce to the base with salad vegges as topping and for the second one I used hummus. I honestly loved both of them. Sabudana Khichdi

Sabudana Khichdi is one of the most consumed breakfast dishes in India and often consumed during fasting season. This breakfast dish is one of my favourites. It does not use a whole lot of spices and it's very simple to make it delicious and soul comforting at the same time. The only tricky part to this dish is to make sure all the sabudana (tapioca pearls) are not clumped up together and remain as individual pearls. Misal Pao

This is one of the most popular Maharashtrian breakfast, brunch or snack and also one of the most famous street foods. Misal is a spicy dish made with moth beans/matki sprouts or mixed sprouts and served with pao (Indian bun).  There is a very famous restaurant in Thane by the name Mamledar which served the best misal pav where I grew up. Me and my friends would often go there to just binge on a plate of  the spiciest misal pav or as they call it zalzalit misal. This has the spiciest gravy (rassa) with a layer of spicy oil floating on the top. We would always have a competition on who could finish off the misal without sipping water in between. Sri Lankan Prawns Curry

I have tried prawns in a variety of preparation styles and flavours but making this Sri Lankan style curry was my first. As always I was very excited to try out something new with a new combination of flavours and using a different variety of ingredients. This juicy prawns curry infused with the Sri Lankan spice mix I made from scratch and coconut milk base was exactly what I needed after a super hectic day. Traditionally you add the prawns heads into the curry for an additional depth of flavour. However, I had bought some pre-cleaned prawns from the market which had their heads removed so could not add the heads.
