Chatpata Egg Roll


The quickest, easiest and most delicious snack!! The egg roll is a perfect meal for a quick bite during busy days or a snack in the evening. I just love this chatpata roll. When I have a really busy schedule and don't have the time to make a proper meal for myself this is one of my go to meals. It's also a great snack for kids and they will love it (just avoid adding the chills and substitute the spicy sauce with some ketchup πŸ˜‰).

COOK TIME: 10 min
  • 2 eggs
  • 2 leftover chapati
  • ¼ cup cabbage (shredded)
  • ¼ cup bell pepper (thin slices)
  • ¼ cup capsicum (thin slice)
  • 1 onion (thin slice)
  • 1 green chilli (finely chopped)
  • spicy tomato sauce/Tabasco sauce/chilli sauce
  • chat masala
  • grated cheese
  • lemon juice
  • salt
  • pepper
  • oil

1. Make the Roll: Add some oil to a pan. Once heated, add the onions and cook them for a min or two. Add the bell peppers some salt and pepper and stir this for 2 mins. Take this out in a bowl, sprinkle some chat masala and drizzle some lemon juice and give it a good mix. In a bowl break an egg, add some salt, pepper, green chili and give it a good whisk. In a pan add some butter and pour in the egg and make an omelette. Place the chapati on top of the egg and let it cook for 1 min. Put this on a plate and drizzle some spicy sauce and add the veggies. Grate some cheese and roll it. Enjoy tasty egg roll with your hot Masala chai.

Sabudana Khichdi

Sabudana Khichdi is one of the most consumed breakfast dishes in India and often consumed during fasting season. This breakfast dish is one of my favourites. It does not use a whole lot of spices and it's very simple to make it delicious and soul comforting at the same time. Misal Pao

This is one of the most popular Maharashtrian breakfast, brunch or snack and also one of the most famous street foods. Misal is a spicy dish made with moth beans/matki sprouts or mixed sprouts and served with pao (Indian bun).  There is a very famous restaurant in Thane by the name Mamledar which served the best misal pav where I grew up. Me and my friends would often go there to just binge on a plate of  the spiciest misal pav or as they call it zalzalit misal. Turkish Bread with Za'atar Spice and Baba Ghanoush Dip

I came across Turkish bread for the first time after I moved to the Netherlands and I bought it from a Turkish shop near my place. Absolutely fell in love with it! The softness and flavours were just amazing and right then I decided I am going to try making my own batch. This is absolutely lovely and versatile; you can pair it with anything. Falafal Flatbread with Classic Hummus & Veggie Topping

These are perfect as a snack or a party platter. I love falafal and falafal in the form of a flatbread is just wow.  There is no actual falafal in this recipe but the ingredients used to make falfal like chickpea, cumin, garlic, parsley, coriander, olive oil are used to make this flat bread.  I used hummus and some salad veggies as topping and just fell in love with it. You can also use yogurt or muhammara dip. I actually used two kinds of dip here, on one of the flat breads I added some pizza sauce to the base with salad vegges as topping and for the second one I used hummus. I honestly loved both of them.
