Caramelized Fig Toast

Everyday I wake up, I look forward to my breakfast. A lot of times I have planned out my dish the previous night and am eager to make it in the morning, sometimes even dreaming about my meal as I am about to wake up πŸ˜†πŸ˜†. Other days I wake up and while I freshen up, all I can think about is what I should prepare as my first meal. Food has always been a very important part of my life. It has shaped me into a person who loves every aspect of a meal.
Earlier this week I had been to the farmer's market with my husband and found some amazing fresh produce one of which were these figs. I immediately wanted to make this fig toast for breakfast the next day and my husband went bonkers from the first bite. I served my fig toast with some amazing ricotta cheese and a beautiful sunny side up egg. I used a nice sesame seed coated bread I got from the bakery for this dish. I hope you enjoy these amazing toast as much as we did 😊.

COOK TIME: 15 mins
  • 2 ripe figs (cut into circles)
  • 2 bread slices
  • ricotta cheese 
  • some lemon zest
  • butter for toasting the bread
  • 1 tbsp brown sugar
  • 1 tsp cinnamon 
  • seeds mix for garnish
  • honey for drizzle
1. Bake Figs: Pre-heat the oven to 200°C. While the oven is getting heated, place the cut figs onto a baking tray and sprinkle some brown sugar and cinnamon on them. Place the tray in the oven and bake the figs for 20 mins.

2.  Make Toasts: In a pan, add some butter, place the bread on them and toast till it gets slightly brown. In a small bowl, whisk some ricotta cheese, some lemon zest and give it a good mix. Take the toast and place it on a plate, spread a generous amount of ricotta cheese. Add the baked figs, drizzle some honey and sprinkle some mixed seeds. Enjoy 😊!!

Nei appam in Tamil literally translates as nei meaning ghee and appam meaning pancake. It's a traditional sweet made during auspicious events like kartikai, gokulastami and other auspicious events and is a great snack for kids. Puttu with Kadala Curry

Puttu is a staple breakfast dish in south India popular in the states of Kerala and Tamil Nadu. "Puttu" means portioned in Malayalam. It is a very filling and hearty breakfast dish made with rice flour mixed with salt water and typically steamed in a puttu steamer with coconut shavings in between. Mackerel Curry

I recently discovered this recipe on my usual inspiration hunt online and decided to give it a try.
