Puttu with Kadala Curry

Puttu is a staple breakfast dish in south India popular in the states of Kerala and Tamil Nadu. "Puttu" means portioned in Malayalam. It is a very filling and hearty breakfast dish made with rice flour mixed with salt water and typically steamed in a puttu steamer with coconut shavings in between. Sometimes a bit of jaggery powder is also added to make it a bit sweet. My husband loves to eat puttu with elaichi bananas or other small bananas; mixing it with the puttu.
I came across this dish after I got married into a Malayali household and got exposed to a lot of Kerala recipes and dishes. My mother-in-law makes really amazing puttu and Kadala curry. So, after I moved here to the Netherlands I wanted to give this a try. I didn't have a puttu steamer, so I asked my mother-in-law and she gave me the idea to steam it inside a coconut shell which is also a popular traditional method of cooking. It was totally worth all the effort and to be honest it was really very easy. The feeling of getting a perfect steamed puttu was simply bliss. Combined with some spicy Kadala curry, I was taken to the memories of home. Nailed it!
SERVES: 2

PREP TIME: 5 mins for puttu + 5 mins for Kadala
COOK TIME: 10 mins for puttu + 15 mins for Kadala

for Puttu:
  • 1 cup puttu flour (normal rice flour also works)
  • ¼ cup of  freshly grated coconut
  • ¼ tsp salt
  • ½ cup hot water
  • 1 whole shell of coconut broken in to half or a puttu steamer

for Kadala Curry:
  • ½ cup black chana (Kadala) soaked overnight or for at least 5 hours
  • 1 medium onion (finely chopped)
  • 2 dried red chilli
  • ¼ cup fresh grated coconut
  • 2 cloves of garlic (sliced)
  • 1 inch ginger (chopped)
  • 1 green chilli (slit in half)
  • 1 tsp mustard seeds
  • 1 tsp jeera
  • 1 tsp haldi powder
  • 1 tsp red chilli powder
  • 1 tbsp coriander powder
  • 1 tbsp garam masala
  • coriander (finely chopped for garnish)
  • 7-8 curry leaves
  • salt
  • 2 tbsp coconut oil or vegetable oil
Kadala Curry:

1. Cook Kadala: In a pressure cooker add the Kadala, salt, turmeric powder and red chilli powder and cook it for 1 whistle. Switch off the flame and keep it aside to depressurize naturally.

2. Make Curry: In a pan add some coconut oil, once the oil is heated add the mustard and jeera. Add the dried red chilli, ginger and garlic and sautΓ© this for few seconds. Add the chopped onions, coconut and cook this till it turns slight brown in colour. Now, add turmeric, coriander powder and mix well. Add the cooked Kadala with it's water, add garam masala and cook for about 5-10 mins till you get a good gravy consistency. Garnish with come chopped coriander and enjoy while its hot.

Puttu:

1. Boil Water: In a pot heat water with some salt. Once the water is heated switch off the stove and keep it aside.

2. Prepare Puttu Flour: In a big bowl add the puttu flour and slowly add the salty water and mix it till you get a bread crumb type consistency. When you press the flour together, it should hold but you should also be able to crumble it again. Be careful not to add too much water since you don't want to make a dough.

3. Steam Puttu: I used the part of the coconut shell with the eye to make my puttu. You can use the puttu steamer. Heat some water in a wide vessel and keep a strainer or a vessel with multiple holes on it. Close the top with a lid for the steam to form. In the coconut shell first add the combined puttu flour up to ¼ level of the shell. Then, add some coconut. Again add the puttu flour covering the rest of the shell. Do not press down on the flour too much, you need the steam to penetrate through the flour. Repeat this process with the other shell. Leave a little space on the top for the puttu to steam properly. Now, place the shells in the steamer facing the top portion upwards and close the lid and steam it for 10-15 mins. Remove it from the steam after 15 mins and let it cool down for few mins. To remove the puttu just place it upside down and tap slightly. Enjoy with the hot Kadala curry.

Turkish Bread with Za'atar Spice and Baba Ghanoush Dip

I came across Turkish bread for the first time after I moved to the Netherlands and I bought it from a Turkish shop near my place. Absolutely fell in love with it! The softness and flavours were just amazing and right then I decided I am going to try making my own batch. This is absolutely lovely and versatile; you can pair it with anything. You can make a bruschetta, pair it with some shrimp salad or have it with some dip like hummus and baba ghanoush. I paired mine with some creamy baba ghanoush and a generous garnish of za'atar spices. The best part about creating this dish was that it was so simple and easy to make. In my head I had inflated the difficulty too much and was expecting some really hard and tricky process to it, but it turned out to be so simple! Not to forget the excitement I got when it came out as amazing as I was expecting. SOFT, FLUFFY AND DELIUCIOUS! So, read on to know how I made this amazing bread with a simple and fool proof method. ...

Nei Appam

Nei appam in Tamil literally translates as nei meaning ghee and appam meaning pancake. It's a traditional sweet made during auspicious events like kartikai, gokulastami and other auspicious events and is a great snack for kids. The recipe is very simple and quick to make with very few ingredients. Just the sweet aroma of ghee and fried appam that fills the kitchen when cooking is mouthwatering.  This is one of my favourites among South-Indian treats. During traditional festivals at home, my amma would make nei appams along with a feast and me and my sister would stand besides her hogging on these hot out of the pan. Now that I'm married and living with my husband, I make these delicious treats at home while my husband stands next to me and hogs on them  🀭🀭 . Beetroot Kadhi With Crispy Bhindi

Kadhi are one of the easiest and quickest dishes ever made. In this rendition of the dish, inspired from a recipe by @cupcakeree , I have tried my hand at giving the traditional Gujrati kadhi a slight twist by adding some beetroot to give it a beautiful fuchsia colour. The crispy fried bhindi (okra) and sweet tangy kadhi combo was simply amazing. I served them with some steamed red rice and it was a big hit at lunch.  My dad isn't a big fan of kadhi and tries his best to avoid anything with a yogurt base, but to my surprise he relished his meal and that was the best compliment for me. He not only loved it but also kept asking for more. All I can say is, "mission success!!" 😁😁. Try it out for yourself and let me know your take on it in the comments below. Roasted Chicken & Sweet Potato in Coconut Curry

Sweet potatoes are my one of my favorites. It brings me joy very much like candy for children 😁😁😁 and I had some leftover from a previous recipe on this particular day. It was really pleasant outside with some nice weather and that inspired me to combine some of my favorite things together. Thus, this recipe was born. The amazing roasted chicken wonderfully infused with spices cooked in coconut milk along with some sweet potatoes is simply the best combo I have tasted. This was the first time I tried something like this and I am glad to report it won't be the last. Unlike most of my recipes that are inspired from some existing dishes, this was something completely new I tried for myself and wow! it simply blew my mind and brought happiness to my soul πŸ˜πŸ˜‹πŸ˜‹πŸ˜. Kashmiri Dum Aloo

This dish is very famous in the northern part of India (Kashmir). Dum Aloo is a beautiful delicious potato dish cooked in a creamy yogurt gravy. My memories with Dum Aloo goes way back to my childhood days. This recipe is dedicated to my late aunt who was this amazing cook and the purest soul ever. The moment she knew we are visiting she would make this dish with hot parathas and peas pulao for us. The aroma of Dum Aloo would reach us even before we stepped inside her house. It was truly amazing! Sadly she passed away a few years ago when she lost her battle with cancer. So, in memory of her and to honor her love for cooking I dedicate this dish to my aunt Mani. Thank you for introducing me to this dish. I hope you are happy and at peace wherever you are. ...

Rainbow Salad Bowl

For the longest time I couldn't understand how people can have just a bowl of salad for lunch and be full. It just didn't register. Coming from a country that loves food and where food is an expression of love itself, it was too difficult for my teeny tiny brain to comprehend. It's only when I moved to Europe and experienced my first salad bowl that I truly understood. It felt like a nice warm hug during gloomy days. I completely agree that salads can be boring sometimes and just not as tasty as you would want it to be, that's why I try my best to make my bowls interesting and delicious every time. Now, even my mom is a fan of my salad bowls. I keep adding and experimenting with the dressing and this time I just tried my first ever roasted and stirred rainbow salad bowl. Hope you like it. πŸ˜ŠπŸ˜ŠπŸ˜Š ...

Egg Bites

This recipe is perfect for an evening snack or even as a fun breakfast. I normally don't enjoy making the same kind of omelette or scrambled egg every time and am always looking for different ways to make my eggs. Some very rare days, when I'm in super hurry, I might fall back to a traditional recipe, but generally, nope! I was watching how unniappams are made one day and it just sparked this fun way for me to make my eggs. It's just so simple and such an amazing way to eat. I gobbled 4 or 5 of them just because they were so delicious. Well, for this recipe you will need an unniappam mold which, unless you are South Indian, is unlikely, but that's how I got the shape. I also whisk the eggs more than usual before adding the veggies to make them extra fluffy. πŸ˜ŠπŸ˜ŠπŸ˜Š ...

Galette (Sweet & Savoury versions)

Recently I was talking with my best-friend and discussing about new recipes and how well things are going with my page, when she introduced me to this amazing dish that's been trending and wanted me to give it a try. Me being an amateur at baking and zero experience, wasn't sure how it would turn out. So, I went online and looked for the recipe and decided to give it a try πŸ™‚. As my first attempt, I made these small ones so that if I fail not much will be wasted and it would be less of a disappointment. I didn't have unsalted butter with me so I used sated ones and just did not add any salt in the dough. Also added a little sugar to it just for a slight extra flavour. Then, while it was baking, my oven broke down with just 10 mins left on it, leaving me completely heartbroken. I thought for a while and came up with a way to salvage it. I added it as a tip to the end of my recipe. So read on to find out how I saved my recipe. πŸ˜œπŸ˜œ ...
