Puttu with Kadala Curry

Puttu is a staple breakfast dish in south India popular in the states of Kerala and Tamil Nadu. "Puttu" means portioned in Malayalam. It is a very filling and hearty breakfast dish made with rice flour mixed with salt water and typically steamed in a puttu steamer with coconut shavings in between. Sometimes a bit of jaggery powder is also added to make it a bit sweet. My husband loves to eat puttu with elaichi bananas or other small bananas; mixing it with the puttu.
I came across this dish after I got married into a Malayali household and got exposed to a lot of Kerala recipes and dishes. My mother-in-law makes really amazing puttu and Kadala curry. So, after I moved here to the Netherlands I wanted to give this a try. I didn't have a puttu steamer, so I asked my mother-in-law and she gave me the idea to steam it inside a coconut shell which is also a popular traditional method of cooking. It was totally worth all the effort and to be honest it was really very easy. The feeling of getting a perfect steamed puttu was simply bliss. Combined with some spicy Kadala curry, I was taken to the memories of home. Nailed it!
SERVES: 2

PREP TIME: 5 mins for puttu + 5 mins for Kadala
COOK TIME: 10 mins for puttu + 15 mins for Kadala

for Puttu:
  • 1 cup puttu flour (normal rice flour also works)
  • ¼ cup of  freshly grated coconut
  • ¼ tsp salt
  • ½ cup hot water
  • 1 whole shell of coconut broken in to half or a puttu steamer

for Kadala Curry:
  • ½ cup black chana (Kadala) soaked overnight or for at least 5 hours
  • 1 medium onion (finely chopped)
  • 2 dried red chilli
  • ¼ cup fresh grated coconut
  • 2 cloves of garlic (sliced)
  • 1 inch ginger (chopped)
  • 1 green chilli (slit in half)
  • 1 tsp mustard seeds
  • 1 tsp jeera
  • 1 tsp haldi powder
  • 1 tsp red chilli powder
  • 1 tbsp coriander powder
  • 1 tbsp garam masala
  • coriander (finely chopped for garnish)
  • 7-8 curry leaves
  • salt
  • 2 tbsp coconut oil or vegetable oil
Kadala Curry:

1. Cook Kadala: In a pressure cooker add the Kadala, salt, turmeric powder and red chilli powder and cook it for 1 whistle. Switch off the flame and keep it aside to depressurize naturally.

2. Make Curry: In a pan add some coconut oil, once the oil is heated add the mustard and jeera. Add the dried red chilli, ginger and garlic and sautΓ© this for few seconds. Add the chopped onions, coconut and cook this till it turns slight brown in colour. Now, add turmeric, coriander powder and mix well. Add the cooked Kadala with it's water, add garam masala and cook for about 5-10 mins till you get a good gravy consistency. Garnish with come chopped coriander and enjoy while its hot.

Puttu:

1. Boil Water: In a pot heat water with some salt. Once the water is heated switch off the stove and keep it aside.

2. Prepare Puttu Flour: In a big bowl add the puttu flour and slowly add the salty water and mix it till you get a bread crumb type consistency. When you press the flour together, it should hold but you should also be able to crumble it again. Be careful not to add too much water since you don't want to make a dough.

3. Steam Puttu: I used the part of the coconut shell with the eye to make my puttu. You can use the puttu steamer. Heat some water in a wide vessel and keep a strainer or a vessel with multiple holes on it. Close the top with a lid for the steam to form. In the coconut shell first add the combined puttu flour up to ¼ level of the shell. Then, add some coconut. Again add the puttu flour covering the rest of the shell. Do not press down on the flour too much, you need the steam to penetrate through the flour. Repeat this process with the other shell. Leave a little space on the top for the puttu to steam properly. Now, place the shells in the steamer facing the top portion upwards and close the lid and steam it for 10-15 mins. Remove it from the steam after 15 mins and let it cool down for few mins. To remove the puttu just place it upside down and tap slightly. Enjoy with the hot Kadala curry.

Mackerel Curry

I recently discovered this recipe on my usual inspiration hunt online and decided to give it a try. During my grocery run at the city centre before, I decided to have a look at the fresh fish store and got some amazing looking mackerel filets. I had not decided on the recipe at that moment, but then I happened to have everything at home for this recipe and things simply fell into place. Normally I am into masaledar, spicy and coconutty fish curries but this time I did not have any coconut milk at home and I was also feeling a bit lazy with my cooking. This recipe was an absolute delight for my mood with an amazing tangy, sour flavour of tamarind and vinegar and a slight sweetness of jaggery. Quick and simple! Totally worth it and definitely recommended.  Press Enter and insert Image https://www.instagram.com/p/CI276lADeR5/   ...

Shimplya - Malvani Masala (Mussels Curry)

I have had this recipe on my bucket list for a long time. When I saw these fresh mussels in the store, I immediately knew what my next dinner meal would look like 😁😁. Malvani shimplya is definitely one of my favourites. This style of cooking mussels is simply the best.  When I moved to the Netherlands, I carried some of my favourite spice mixes with me including this Maharashtrian malvani masala. Malvan is basically a town in the Sindhudurg district of Maharashtra and this masala is curated from that region. I am a hard core fan of these masalas and anything cooked in these spices are on my list of favourites. So you can only imagine my excitement when I got my hands on these awesome fresh mussels. The aroma of the spices and the mussels that filled my kitchen when I was cooking them simply took me on a trip of Konkan Maharashtra. I one hundred  percent  recommend this dish. Mussels + Malvani spices = "Heaven" Pre...

Stuffed Brinjal (Andhra Style)

This particular vegetable happens to have many names in English and I learnt to call it brinjal, but they are also commonly known as eggplant or aubergine. This is a new recipe that I learnt from a friend. I have made stuffed brinjal before, but it was in a completely different style. At our house we make it in a variety of different ways and this time when mom got these small ones, I wanted to nervously try out my friends recipe. Like I usually do, I followed the recipe by adding a slight twist of my own and eagerly waited for my mom's review. Amma just loved it and praised me quite a bit. With cooking, like most things in life, it's okay to fail sometimes. It's more important to give it a try and make sure you learn from your mistakes. You do not need to be 100% perfect every time. In my case, one of the brinjals was not completely cooked through, but I nailed the ratio of the spices and flavour. So hope you give this a try and let me know how it turned out.πŸ™‚πŸ™‚ ...

Sri Lankan Prawns Curry

I have tried prawns in a variety of preparation styles and flavours but making this Sri Lankan style curry was my first. As always I was very excited to try out something new with a new combination of flavours and using a different variety of ingredients. This juicy prawns curry infused with the Sri Lankan spice mix I made from scratch and coconut milk base was exactly what I needed after a super hectic day. Traditionally you add the prawns heads into the curry for an additional depth of flavour. However, I had bought some pre-cleaned prawns from the market which had their heads removed so could not add the heads. In this recipe I have nevertheless written how to use the prawns heads in the preparation.  The curry definitely came out amazing and simply mesmerising. Hope you enjoy the recipe as much as I did. Mango Milkshake

Mangoes are one of my favorite fruits of all. It's the best thing about summers in India. It just brings me a lot of joy. As a kid I used to eagerly wait for the box of fresh mangoes every summer. Every year on his way back from a work trip, my dad would make sure he gets a box of mangoes for us. I would then sit in my veranda with my plate full of mangoes, smearing it all over my face and clothes and completely upsetting my mom. Any guest who visited us during this time would be served some amazing fresh mango milkshakes and that always reminds me of some nice family times. Me and my sister would be on our best behaviour just to score some extra milkshake. Every time mom cut up a mango for us, we would fight over who got more pieces and of course who gets to eat and suck the flesh around the seed. So, towards the end of this summer, with a lot of nostalgia, I decided to bid farewell by preparing my favourite milkshake. Hope you like it as much as I do. ...

Turkish Bread with Za'atar Spice and Baba Ghanoush Dip

I came across Turkish bread for the first time after I moved to the Netherlands and I bought it from a Turkish shop near my place. Absolutely fell in love with it! The softness and flavours were just amazing and right then I decided I am going to try making my own batch. This is absolutely lovely and versatile; you can pair it with anything. You can make a bruschetta, pair it with some shrimp salad or have it with some dip like hummus and baba ghanoush. I paired mine with some creamy baba ghanoush and a generous garnish of za'atar spices. The best part about creating this dish was that it was so simple and easy to make. In my head I had inflated the difficulty too much and was expecting some really hard and tricky process to it, but it turned out to be so simple! Not to forget the excitement I got when it came out as amazing as I was expecting. SOFT, FLUFFY AND DELIUCIOUS! So, read on to know how I made this amazing bread with a simple and fool proof method. ...
