I simply love a really good salad no matter what kind. Chickpeas in particular, as an excellent source of protein, has been my go to ingredient for a long time.
Recently, I have been reading a lot of mediterranean salad recipes and wanted to give it a try. This tangy sweet salad with a bit of lime zest is simply amazing. It's a true comfort meal with just the perfect blend of spices and the sweetness of dates. It totally rocked on my lunch table. So, give this super easy, healthy and delicious recipe a try and let me know your take on it.

- 1 cup chickpea (soaked overnight an then boiled)
- 1 roasted bell pepper (diced)
- ½ cup chopped cucumber
- ½ cup chopped tomatoes
- ¼ cup chopped mint leaves
- ¼ cup chopped parsley
- 3 cloves garlic (chopped)
- 1 tbsp lime zest
- 1½ cumin powder
- ground pepper
- sea salt
- 4-5 seedless dates (chopped)
- 2 tbsp lime juice
- 2 tbsp olive oil
1. Make Salad: In a large bowl mix olive oil, lemon zest, garlic, sea salt, cumin powder and pepper. Now add the chickpeas, tomatoes, dates, cucumber, roasted bell pepper, parsley and mint leaves and mix it well. Transfer this to a serving bowl and add some lime juice and serve. You can also add some goat cheese or feta cheese as per your preference.
