The tangyness of the curry and crispness and softness of the egg mixed with spices can only make one close their eyes and say πππ
Making this dish was truly a soulful experience because it's what food is to me. The recipe of this dish is as simple as it looks all you need is the following ingredients:
1. Fry the boiled eggs: Take a kadai (pan) and add 2 spoon oil in it. Once the oil is heated add 1/2 teaspoon haldi. Now slit the boiled eggs into halves and add it to the kadai and fry it for 2-3 min till the white portion of the egg starts to turn golden brown. Once this is done remove the eggs from the kadai n keep it aside
2. Make onion paste: In the kadai, add 2 spoons oil, add the roughly chopped onions to it and cook till the onions start to get pink. Once the onions are cooked remove them and transfer them to a mixer/blender jar. Let this cool. Once cooled down grind it into a paste.
3. Make curry: In the kadai, add 2 spoon oil, jeera and some curry leaves. Now add the onion paste, smash the ginger & garlic into a paste and add it to the kadai, add haldi, chilli powder, daniya powder too. Cook this mixture for a min. Add the chopped tomatoes and cook it for 2 minutes, add garam masala, salt and 1 cup water. Cook this till u see the masala leaving oil. This is the perfect time to add those nice crispy eggs. Stir the masala and drop in the eggs to the gravy. Stir the gravy and make sure you soak the eggs in it. Cook this for a min or 2. Add some finely chopped coriander over the egg masala and serve it hot with some roti or steamed rice π. ππππππ.

- 1 medium finely chopped π
- 4 garlic cloves
- few curry leaves (optional)
- 2 green chillies finely chopped
- 1/2 tsp finely chopped ginger
- 1/2 tsp haldi (turmeric)
- 1/2 tsp chilli powder
- 1 spoon garam masala
- 1/2 spoon dhaiya (coriander) powder
- 1/2 tsp jeera (cumin seeds)
- some finely chopped coriander
- salt as per your taste
