Baked Sweet Potato Empanadas

With monsoon hitting the city so hard, I thought of baking something healthy, sweet and satiating to the soul. These amazing, easy to make Latin-American pastries are so so delicious that I couldn't hold myself from writing about them and put out this recipe for all of you. I made these out of whole-wheat flour and baked them to create a slightly healthier version for a fulfilling snack or dessert.

SERVES: 10-15
PREP TIME: 1 hr
COOK TIME: 20 min
  • 3 cups whole wheat flour
  • ½ cup chilled and cubed butter
  • 1 tsp baking powder
  • 1 tsp salt
  • ¾ cup cold water
  • 2 cups sweet potato (washed and peeled)
  • ½ cup powdered sugar/jaggery
  • ¼ cup water
  • 1 tsp cumin powder
  • 1 tsp cardamon powder
  • 1 tsp chilli powder
  • pinch of salt
  • ¼ tsp turmeric powder
1. Make dough:  In a food processor blitz the flour, salt, butter and baking powder together. Slowly add cold water till the dough comes together. Remove the dough from the food processor and knead into a round ball. Cover with a plastic film wrap and refrigerate it for 30 mins.

2. Make filling: Pressure cook the sweet potatoes with a pinch of salt for 2 whiles on high heat. Remove and mash them in a bowl. In a kadai, add some sugar, water and stir till the sugar melts, add the mashed potatoes, cumin power, turmeric powder, cardamon powder, chilli powder and some salt. Mix it properly and remove it into a bowl.

3. Fill and Shape:  Remove the dough from the fridge and flatten it. With the help of a cookie cutter cut out round shapes. Take some of the sweet potato filling and put it in the middle. Fold the dough over the filling and seal the ends. You can seal using various techniques and I used a fork to seal and create a beautiful pattern 😊. 

4. Bake: To preheat the cooker add one cup of salt in it, place a stand in the middle, remove the rubber ring from the lid and with a closed lid, heat it on a high flame. On the plate which you will use for baking, brush some butter and place the emapandas. Also, brush some more butter or egg wash on the empanadas before placing them on the plate. Bake these for about 10-15 mins. Place them on a plate and dust some powdered sugar. Amazing delicious empanadas are ready. I personally enjoyed these with some coffee but you can have with some chocolate dip as well. Enjoy πŸ˜‹πŸ˜‹!!

Nei Appam

Nei appam in Tamil literally translates as nei meaning ghee and appam meaning pancake. It's a traditional sweet made during auspicious events like kartikai, gokulastami and other auspicious events and is a great snack for kids. The recipe is very simple and quick to make with very few ingredients. Sri Lankan Prawns Curry

I have tried prawns in a variety of preparation styles and flavours but making this Sri Lankan style curry was my first. As always I was very excited to try out something new with a new combination of flavours and using a different variety of ingredients. This juicy prawns curry infused with the Sri Lankan spice mix I made from scratch and coconut milk base was exactly what I needed after a super hectic day. Traditionally you add the prawns heads into the curry for an additional depth of flavour. However, I had bought some pre-cleaned prawns from the market which had their heads removed so could not add the heads. Beetroot Kadhi With Crispy Bhindi

Kadhi are one of the easiest and quickest dishes ever made. In this rendition of the dish, inspired from a recipe by @cupcakeree , I have tried my hand at giving the traditional Gujrati kadhi a slight twist by adding some beetroot to give it a beautiful fuchsia colour. The crispy fried bhindi (okra) and sweet tangy kadhi combo was simply amazing. I served them with some steamed red rice and it was a big hit at lunch.  My dad isn't a big fan of kadhi and tries his best to avoid anything with a yogurt base, but to my surprise he relished his meal and that was the best compliment for me. Black Channa Curry

This delicious black gram curry is perfect for a quick lunch meal. It's a one pot meal bursting with flavors and an excellent substitute for a meaty meal day. Egg Bites

This recipe is perfect for an evening snack or even as a fun breakfast. I normally don't enjoy making the same kind of omelette or scrambled egg every time and am always looking for different ways to make my eggs. Peach Galette

It's my first summer in the Netherlands and I wanted to make good use of the fresh summer fruits that have become available in all the supermarkets. I love peaches and with an abundance of this fruit on the shelves, I decided to make one of my favourite pastry dishes.
