Smoked Salmon & Avocado Sandwich with Ricotta Cheese Spread

Every morning I truly look forward to making a beautiful breakfast plate full of nutrition and color. I believe it's really important to start your day with a bright and comforting meal that is not only nutrition and energy packed, but also livens your mood. At the end of the day, what you feed your body reflects immensely on your mind and it helps to start your day with a bright mood.
This week I went to the supermarket and got some really fresh produce including some avocados, smoked salmon and freshly baked bread. I also had some left over oven baked (dehydrated) cherry tomatoes that I made for my salad a day before, which I decided to add to this gorgeous brunch sandwich. 
The combination of the amazing bread and fresh ingredients was completely soul satisfying to say the least. Read on to learn what I used in my sandwich. Try it out and let me know what you think in the comments below.

  • white bread of your choice
  • ½ avocado sliced 
  • 1 small red onion (thinly sliced)
  • ½ cup ricotta cheese
  • 1 tbsp dehydrated tomatoes
  • 1 tsp finely chopped dill
  • 1 tsp sesame seeds
  • 1 tsp lime juice
  • 1 slice of smoked salmon
  • 3 whole eggs
  • 2 tbsp milk 
  • 4 tbsp garlic butter / butter 
  • salt
  • pepper
1. Make Scrambled Eggs: Take a bowl and break the eggs in them, add some salt, pepper and milk and whisk till the yolk is completely broken and all the spices are mixed well. Now, add some butter to a pan and pour the eggs. Stir the eggs until they get scrambled. Once done, remove from the heat and keep it aside.

2. Toast the Bread: Apply some garlic butter/any butter on the bread slices and toast it in the same pan.

3. Ricotta Spread: In a small bowl, add the ricotta, dill and some lime juice and give it a good mix. Keep it aside.

4. Assemble & Plate: Spread some ricotta cheese on the toasted bread, add the scrambled eggs, smoked salmon, avocado, some slices of red onion and some dehydrated tomatoes. Now, sprinkle some salt, pepper and sesame seeds and enjoy this amazing sandwich.

Mackerel Curry

I recently discovered this recipe on my usual inspiration hunt online and decided to give it a try. During my grocery run at the city centre before, I decided to have a look at the fresh fish store and got some amazing looking mackerel filets. I had not decided on the recipe at that moment, but then I happened to have everything at home for this recipe and things simply fell into place. Normally I am into masaledar, spicy and coconutty fish curries but this time I did not have any coconut milk at home and I was also feeling a bit lazy with my cooking. This recipe was an absolute delight for my mood with an amazing tangy, sour flavour of tamarind and vinegar and a slight sweetness of jaggery. Quick and simple! Puttu with Kadala Curry

Puttu is a staple breakfast dish in south India popular in the states of Kerala and Tamil Nadu. "Puttu" means portioned in Malayalam. It is a very filling and hearty breakfast dish made with rice flour mixed with salt water and typically steamed in a puttu steamer with coconut shavings in between. Sometimes a bit of jaggery powder is also added to make it a bit sweet. My husband loves to eat puttu with elaichi bananas or other small bananas; mixing it with the puttu. I came across this dish after I got married into a Malayali household and got exposed to a lot of Kerala recipes and dishes. My mother-in-law makes really amazing puttu and Kadala curry. So, after I moved here to the Netherlands I wanted to give this a try. I didn't have a puttu steamer, so I asked my mother-in-law and she gave me the idea to steam it inside a coconut shell which is also a popular traditional method of cooking. Peach Galette

It's my first summer in the Netherlands and I wanted to make good use of the fresh summer fruits that have become available in all the supermarkets. I love peaches and with an abundance of this fruit on the shelves, I decided to make one of my favourite pastry dishes. Turkish Bread with Za'atar Spice and Baba Ghanoush Dip

I came across Turkish bread for the first time after I moved to the Netherlands and I bought it from a Turkish shop near my place. Absolutely fell in love with it! The softness and flavours were just amazing and right then I decided I am going to try making my own batch. This is absolutely lovely and versatile; you can pair it with anything. You can make a bruschetta, pair it with some shrimp salad or have it with some dip like hummus and baba ghanoush. I paired mine with some creamy baba ghanoush and a generous garnish of za'atar spices. The best part about creating this dish was that it was so simple and easy to make. In my head I had inflated the difficulty too much and was expecting some really hard and tricky process to it, but it turned out to be so simple! I have been waiting to make this recipe for a long time. Baking is one of my favourite ways of cooking eggplants.
