Chole (chickpea) masala is one of my favorite dishes. There are a lot of ways to make this and I think everyone likes to experiment with this recipe. This is one of my versions that I simply love. The spices are perfectly infused into the chole and it brings out the wow factor in this dish that is to die for π€€ππ. It's a very popular and frequently prepared dish in North-Indian households and is often enjoyed with some hot rotis, rice or parathas. Chole is a diverse dish and can be combined with just about anything and it always makes for an amazing experience.ππ
INGREDIENTS:

1. Boil the chole : In a cooker add the chole with some salt, haldi powder, cardamon pod, bay leaves, cinnamon stick, cloves, peppercorns and some black tea water. Add enough water and cook this for 3-4 whistles.
2. Saute the masala: While the chole is cooking, let's make the masala for it. Take a kadai add some oil to it. Add onions, garlic, ginger, and saute it for about 1 min. Now, add the tomato, green chili and saute this till the tomato turns mushy. Let this mixture cool down a bit. Once cooled, add this to a blender/mixer jar and blend it into a smooth paste.
3. Combining the masala and chole: In the same kadai, add some oil, once the oil is heated add the masala paste to it. Add, haldi powder, red chilli powder, coriander powder, cumin powder, little salt, amchur powder and mix these well. Cook this till you see the oil separating from the masala. Now, remove the cardamon, cinnamon stick, peppercorns, cloves, bay leaves from the chole. Smash some of the chole before adding it to the masala. Put garam masala and a dollop of butter, then cover and cook this for about 4-5min. Garnish with some coriander leaves and enjoy.
4. Plating: You can have this mouth watering chole masala with some garlic naan, roti or steamed rice. My personal favourite is some hot chole with parathas/butter garlic naan.
