Egg Dosa Hummus Wrap





Dosa is a staple breakfast in every South-Indian household. There are many ways to make dosa and you can add a lot of different fillings in it. Personally, I love a nice crisp dosa with some masala inside and a nice tangy coconut chutney to go on the side. These flavours are just the perfect combo. A few days ago I made some hummus and there was some still left over and this is what you get when a south Indian makes hummus; a fusion with their staple breakfast. I made this healthy wrap loaded with some delicious mix of veggies and some South Indian spices.

COOK TIME: 15 min
  • ½ cup idli rice
  • ½ cup par boiled rice
  • 1 spoon methi seeds
  • ½ cup urad dal
  • 4 eggs (1 for each dosa)
  • salt
  • 1 cup capsicum (sliced)
  • 1 cup red and yellow bell pepper (sliced)
  • 1 cup onion (sliced)
  • 1 spoon green chilies (finely chopped)
  • ¼ cup spring onion (chopped)
  • chat masala
  • oil
  • hummus

1. Dosa Batter: In a big bowl wash and soak rice, urad dal and methi seeds for 3 hrs. Then in a mixi grinder, grind it to a smooth batter. You can add little water if required. Now, put this in a bowl and keep aside to ferment for 8 hrs. Once the batter is ready, move onto the next step.

2. Prepare the Filling: In a pan add some oil, vegges, some salt and saute this for 2 mins on a low flame. Put it in a bowl, sprinkle some chat masala and give it a good mix.

3. Make the wrap: In a bowl break an egg, add a pinch of salt and pepper and give it a good whisk. Take a pan and pour the dosa batter and gently spread it in a circular motion. Add some oil on the top and cook this for about 1-2 min. Now pour the egg on the dosa and gently spread it around the dosa and let it cook for a min. Add some hummus in the center and spread it little. Add the vegges in the center and cover and let it heat up for few seconds before you roll it gently. Enjoy this wrap with some hummus or chutney by the side and it's just the perfect breakfast/snack.

Sabudana Khichdi is one of the most consumed breakfast dishes in India and often consumed during fasting season. This breakfast dish is one of my favourites. It does not use a whole lot of spices and it's very simple to make it delicious and soul comforting at the same time. Misal Pao

This is one of the most popular Maharashtrian breakfast, brunch or snack and also one of the most famous street foods. Misal is a spicy dish made with moth beans/matki sprouts or mixed sprouts and served with pao (Indian bun).  There is a very famous restaurant in Thane by the name Mamledar which served the best misal pav where I grew up. Me and my friends would often go there to just binge on a plate of  the spiciest misal pav or as they call it zalzalit misal. Turkish Bread with Za'atar Spice and Baba Ghanoush Dip

I came across Turkish bread for the first time after I moved to the Netherlands and I bought it from a Turkish shop near my place. Absolutely fell in love with it! Puttu with Kadala Curry

Puttu is a staple breakfast dish in south India popular in the states of Kerala and Tamil Nadu. "Puttu" means portioned in Malayalam. It is a very filling and hearty breakfast dish made with rice flour mixed with salt water and typically steamed in a puttu steamer with coconut shavings in between. Sometimes a bit of jaggery powder is also added to make it a bit sweet. My husband loves to eat puttu with elaichi bananas or other small bananas; mixing it with the puttu. Falafal Flatbread with Classic Hummus & Veggie Topping

These are perfect as a snack or a party platter. I love falafal and falafal in the form of a flatbread is just wow.  There is no actual falafal in this recipe but the ingredients used to make falfal like chickpea, cumin, garlic, parsley, coriander, olive oil are used to make this flat bread.  I used hummus and some salad veggies as topping and just fell in love with it. You can also use yogurt or muhammara dip. I actually used two kinds of dip here, on one of the flat breads I added some pizza sauce to the base with salad vegges as topping and for the second one I used hummus. I honestly loved both of them. Olan

This is a specialty among keralites and mostly made during onam celebrations. It's a very simple dish made out of just 6 ingredients and lite on your palate. People generally combine it with rice, but it also goes well with idiappam and appams.  This is one of my favorite Kerala dishes because of how simple and light it is.
