Oats is one of the healthiest things you can include in your breakfast meals. It's rich in fiber and protein that helps keep you full and energetic for a busy day. You can prepare your breakfast oats in a lot of ways and one morning, I was really craving for something sweet, but also wanted to make sure I eat healthy. So, I checked my pantry and decided to put together this delicious oats banana pancake. So,

SERVES: 4
COOKING TIME : 15 min
INGREDIENTS:
1. Make roasted oats flour: Heat a pan and add the rolled oats. Roast till it turns slightly brown and gives off an aroma. Set aside on a plate and let it cool down. Now add the roasted oats to a mixi jar and grind it into a smooth powder
2. Mix the batter: In a bowl smash the banana into a mushy paste as best you can. Add the oats powder, flax seeds, jaggery powder, egg and milk to it and mix well. Make sure there are no lumps. If the batter is too thick add some more milk. Make sure the batter isn't too thin or too thick. It's basically pancake batter so it needs to be able to pour but also stay thick on the pan.
3. Make pancakes: Take a pan and add some butter or oil. Now, with the help of a spatula pour the batter on the pan and let it spread a little. Cook on a medium flame for about 2 mins on each side.
4. Plating: Keep the pancakes on a plate and drizzle some honey/maple syrup on it and enjoy. You can also add some chocolate sprinklers or fresh fruits of your choice.
