Zucchini is really light on your tummy and quite a healthy fresh vegetable. It's used in salads, sandwiches and sometimes even as pizza toppings. Being a spice lover, I thought of cooking this vegetable as a sabzi. So, I got some fresh zucchinis tried out this recipe and voila! it was amazing. It's light, fresh and soothing to the taste buds. I would totally recommend this dish to anyone who wants to make something quick and simple for an afternoon lunch.

COOK TIME: 25 min
1. Make Sabzi: In a kadai add some oil and wait for it to heat up, now add the mustard seeds, jeera, curry leaves, pounded garlic and ginger, haldi, chilli powder and onion. Cook this till the onion changes color and becomes slightly brown. Now, add the tomatoes and cook for about 5 mins till the tomatoes get squishy. Add the zucchini and some salt and mix them well. Cover and cook this for 5-6 mins. Stir it occasionally to prevent it from burning. Add some grated coconut and curry leaves. Your zucchini masala sabzi is ready. Enjoy this sabzi with chapatis for a healthy and comforting meal.

- 1 medium tomato (finely chopped)
- 2 garlic cloves (pounded)
- 1 small ginger (pounded)
