Broccoli Parmesan Fritters


Broccoli is a vegetable that I rarely use in my meals. I just kind of don't know how to make them properly and I feel nervous to make them simply as its own dish. On this day, I had ½ of my broccoli left in the fridge and it was about to go bad, and since I was already done with lunch, I decided to make a healthy snack to go with my evening tea. That's how I came up with the idea to make these fritters. With, an experimental mind and the nervousness of failing I gave it a shot. Not only did it turn out to be amazing, it was very light and full of flavor. This dish can also be made as a broccoli cheela and eaten as breakfast. It's super delicious and yummy. πŸ˜‹πŸ˜‹πŸ˜‹

PREP TIME: 15 mins
COOK TIME : 15 mins
  • ½ broccoli (finely chopped)
  • 2 eggs
  • 2 spoon grated cheese/Parmesan cheese
  • 1 small onion (finely chopped)
  • salt
  • ½ tsp chilli powder
  • 2 spoon besan (gram flour)

1. Prep: Add the broccoli in a bowl, add the onion, eggs, Parmesan cheese, salt, besan, chili powder and mix it well.

2. Fry: Add some oil in a pan and drop in the fritters with the help of a spoon. Flatten it from the top and spread it gently. fry both the sides for 2-3 mins each and then remove it onto a plate. Enjoy this low calorie, healthy and delicious fritters with some hot tea .

I recently discovered this recipe on my usual inspiration hunt online and decided to give it a try. Caramelized Fig Toast

Everyday I wake up, I look forward to my breakfast. A lot of times I have planned out my dish the previous night and am eager to make it in the morning, sometimes even dreaming about my meal as I am about to wake up πŸ˜†πŸ˜†. Creamy Mushroom Stroganoff

This is a simple summer lunch, deliciously light on the palate and looks beautiful on the plate. I think that kind of rhymed 😁 😁 😁 . Beetroot Kadhi With Crispy Bhindi

Kadhi are one of the easiest and quickest dishes ever made. In this rendition of the dish, inspired from a recipe by @cupcakeree , I have tried my hand at giving the traditional Gujrati kadhi a slight twist by adding some beetroot to give it a beautiful fuchsia colour. The crispy fried bhindi (okra) and sweet tangy kadhi combo was simply amazing. I served them with some steamed red rice and it was a big hit at lunch.  My dad isn't a big fan of kadhi and tries his best to avoid anything with a yogurt base, but to my surprise he relished his meal and that was the best compliment for me.
