Personally, I'm not a big fan of barley, but since I started kandykurries, I have been a lot more open to new dishes and ingredients. This is first time I made this salad and it came it was a lot different than I anticipated and it has definitely changed my opinion on using barley in my dishes ππ. So weight watchers, health nuts, vegans, in fact anyone who can enjoy a good salad, this one you can add to your list of go to meals. PREP TIME: 10 mins
COOK TIME: 30 mins
- 1 cup pearl barley
- 50g egg plants (diced)
- 1 roasted pepper
- ½ cup parsley
- ½ cup purple cabbage
- 4 garlic cloves (crushed)
- 1 green chilies
- ½ tsp lime juice
- salt
- olive oil
1. Soak and boil: Soak the barley for 2-3 hrs. In a pressure cooker cook the barley with a pinch of salt for 3-4 whistles. Remove this and spread it on a plate and set it aside.
2. Saute: In a pan add little olive oil, now add the crushed garlic cloves and cook for 2-3 mins. Once the garlic is a bit brown add the diced eggplants and cook it for 2-3 mins till they are softened. Add some salt and once this is done add the roasted bell pepper and saute for few seconds.
3. Assemble: In a bowl add the cooked barley, then add the cooked eggplant and veggies. Now add some chopped green chili, purple cabbage and lime juice. Sprinkle some salt and add the chopped parsley. Drizzle some olive oil and give this a good mix. Enjoy some healthy wholesome barley salad.
