This recipe is inspired by my sister who loves to bake these tea cakes. What I truly love about this cake is that it is perfectly crunchy because of the pumpkin seeds and has a very mild sweetness that goes well with my evening chai. Recently it was one of my friend's dad's birthday and because of the covid-19 pandemic, the cake shops were closed. So, we decided to bake one of these for him. It turned out super delicious and soft and it was wiped out in minutes. This cake is especially awesome because, it's egg-less.
This cake goes well with some hot masala chai or you can just add a scoop of ice cream and serve it as a dessert. Let me know in the comments below how you like it. Enjoy πππ!

- 1½ cup maida (all purpose flour)
- ½ tbsp baking soda
- ½ tbsp baking powder
- 1 cup powdered sugar
- ½ cup oil
- ½ cup yogurt
- 1 tsp vanilla essence
- 2 spoons pumpkin seeds
- pinch of salt

1. Whisk: In a bowl add flour, baking power, baking soda, salt and sugar powder and mix all the dry ingredients well. Now, add the yogurt, oil, pumpkin seed and vanilla essence and mix all the dry and wet ingredients together. Make sure all the ingredients are mixed properly or else you may get bites of them after the cake is baked. Grease the cake tin with some butter and dust some flour before pouring the batter. Sprinkle some pumpkin seeds and set aside.

2. Bake: First, pre-heat your cooker. For, this you will need to add 1 cup of salt in the cooker, place a stand on which you are going to keep the cake tray and close the cooker. Remove the rubber belt and whistle before closing the lid and let it pre-heat for about 10 min. Now, remove the lid and place the cake tray on the stand, close the lid and let it bake for 25 mins. Next, open the cooker and check if the cake is cooked or not. Use something like a tooth pick and pierce the cake in the center. If it comes out clean that means its cooked. If not close the cooker and cook for another few mins. Set it aside and let it cool down. Once cooled, carefully remove the cake onto a plate and enjoy π
