Creamy Tomato Basil Soup

A good soup is not only a healthy meal option but can be very comforting and fulfilling. Especially on a nice warm summer afternoon a light creamy soup can be the perfect meal.
This tomato basil soup is definitely a fulfilling and satiating meal option. Undoubtedly basil forward, with a hint of garlic and some Italian spices, this soup is super easy and ready in less than 30 mins.

  • 7-8 medium red tomatoes
  • boiling water
  • ice-cold water
  • 1 tbsp olive oil
  • 1 tbsp garlic (finely chopped)
  • salt
  • ¼ tsp ground black pepper
  • ½ tsp oregano
  • ½ tsp Italian spice mix
  • red chilli flakes (as per taste)
  • 1 tsp sugar
  • 3-4 basil leaves.
  • fresh cream
1. Blanch: Make an "x" cut on the tomatoes while you start heating water in a pot. Once the water is boiling add the tomatoes and blanch them for 2-3 mins. Don't blanch it for more than 3 mins. Immediately remove them and put them into ice-cold water to stop the cooking. 

2. Make Puree: Remove the tomatoes from the water and peel the skin off. Roughly chop them and blend them to a fine puree. 

3. Make Soup: In a pan add olive oil and garlic and saute till the garlic is slightly brown. Now add the tomato puree passing it through a sieve or a strainer. Add salt, pepper, oregano, Italian spice mix, chilli flakes and sugar and give it a good mix and cook for about 5 mins. Add some hot water and basil and  and mix well. Adjust the hot water according to the thickness you desire. 

4. Plate: Pour the soup into a soup bowl, drizzle some cream and enjoy your bowl of comfort with some bread sticks or just butter toasted bread.
