A simple traditional Lebanese Fattoush salad is a mixture of toasted pita bread, veggies and a delicious dressing of pomegranate molasses.
I came across this recipe when I was looking for some inspiration to make a nice lunch. I had some fresh veggies in my refrigerator and simply love a yogurt based dressing for my salad. So, with a swoosh of creamy, garlicky labneh this salad is perfect for a nice summer lunch.

for Salad
- 2 small cucumber (cut in circles)
- 1 cup baby radish (cut in circles)
- 4-5 yellow and red cherry tomatoes (cut in half)
- 1 cup salad leaves
- 1 romaine lettuce head (shredded)
- ½ cup mint leaves
- 1 cup fresh parsley
- 1 lime
for Dressing
- 2 tbsp extra virgin olive oil
- 2 tbsp pomegranate molasses
- 2 cloves garlic (finely chopped)
- 1 tbsp sumac
- ½ tsp salt
- 1 tsp za'atar spice
- 1 pita bread
- 1 tbsp olive oil
- 1 tsp za'atar spice
1. Make Dressing: In a small jar/bowl mix olive oil, pomegranate molasses, lime, garlic cloves, sumac, salt and give it a good mix and set it aside.
2. Make Salad: Take a bowl, and all the veggies, sprinkle some za'atar spice and salt. Toss the veggies. Add the dressing and give it a toss again.
3. Toast Pita Bread: Pre-heat the oven at 180°C. Place the pita bread on a baking tray and sprinkle some olive oil and za'atar spice on it. Toast the pita bread for 15 mins.
4. Plate: Shred the toasted pita bread and spread it on the salad. Drizzle the remaining dressing on the pita bread and enjoy!
