Puran poli is an Indian sweet made during Ganesh Chaturthi, Diwali and other Indian festivals. It's a whole wheat flat bread made with a sweet lentil filling made up of split Bengal gram, sugar/jaggery and ghee. Puran poli is a very famous and loved Indian dessert that originates from Maharashtra.
In Marathi the sweet filling inside is called puran and the flatbread is called poli. This recipe is one of my all time favourites and brings back a lot of nostalgic childhood memories. The traditional puran poli is made using jaggery, but if jaggery isn't easily available to you, you can substitute it with sugar. In my preparation, I used cane sugar instead of jaggery. Apart from jaggery, spices like cardamom, nutmeg, ginger and fennel seeds are used to bring out the amazing flavour of this dish. Hope you enjoy this recipe as mush as we did.

for Puran:
- 1 cup chana dal
- 1 cup powdered jaggery/sugar
- 3 cups water
- 2 tbsp ghee
- 1 tsp ground fennel seeds
- ½ tsp cardamom powder
- ¼ tsp ground nutmeg
- ¼ tsp dry ginger powder
for Poli:
- 1 cup whole wheat flour
- 1 cup all purpose flour (Maida)
- 4 tbsp ghee
- ½ tsp salt
- ¼ tsp turmeric powder
- water to knead
- ghee for cooking the polis
1. Prepare Chana Dal: In a bowl, add the chana dal and soak it for about 30 mins. Now add the dal in the pressure cooker with enough water and pressure cook it for 5-6 whistles till it is cooked. Make sure the chana dal is mushy or pasty. Strain the dal with a strainer for a few mins till the stock is completely drained out.
2. Make Puran: In a pan heat some ghee, add the strained chana dal and powdered jaggery/sugar. Add the spices (ground cardamom powder, ground fennel seeds, ground nutmeg and dry ginger powder). Cook this mixture over medium-low heat till the mixture is completely dry. Once the puran mixture becomes solid and thick, switch off the flame and keep the mixture aside. As soon as the mixture has cooled down, mash the mixture with the help of a potato masher or you can also use a mixer-grinder to mash. Set this mixture aside.
3. Make Poli Dough: In a large plate, add whole wheat flour, maida, salt, turmeric powder and ghee and mix well. Add water slowly and knead it into a soft dough. Once the dough is made, cover and keep it aside for 15 min. Now, divide the dough in equal parts and form into round balls.
4. Make Puran Poli: Take a dough ball and roll in into a large or medium circle on a lightly dusted surface. Place a portion of the puran mixture in the centre of the rolled dough. Secure the puran by bringing the edges together in the centre and pinch them. Sprinkle some flour on the surface and roll the dough again making a large or medium circle depending upon the portion of the poli you have taken. Now, take a flat pan, spread some ghee and place the rolled poli on it. Once the bottom side starts turning brown, turn the poli and spread some ghee on the top. The poli should fluff up.
5. Plate: Serve the poli hot on a plate with a generous topping of ghee and a glass of milk on the side.
